What is a middle?

Two opposing bets at different thresholds where a result inside the gap wins both. For example Over 43.5 and Under 46.5 both win if the total lands on 44, 45, or 46.

Is the Middle % the chance of hitting?

No. It ranks the calculated return metric on the board. It is not the probability that the result lands inside the gap. Use the bet plan to inspect each outcome.

How is a middle different from an arbitrage?

An arbitrage aims for a positive return on every covered outcome. A middle usually has a small loss outside the gap and a larger return inside it.
